Bergamot is especially known for its essential role in the composition of Earl Gray tea. Yet it is a citrus fruit with a powerful, complex and rounded taste. The aroma of bergamot is so powerful that it was necessary to cut them into very thin slices, before semi-candying them for six days. This helped to remove the bitterness and keep only the best. The mixture with dark chocolate highlights the racy and natural elegance of the fruit.
